Baked Hassleback Potato

Josie and I are constantly trying new recipes. She came across a potato recipe on Facebook. We had to try it. Anything to serve potatoes differently is rejoiced in our house. Everyone enjoyed them because the potatoes turned out crispy around the edges and soft in the middle of the rings.

I found several similar recipes online but we did ours just a touch differently. Here is what we did:

Ingredients:

8 medium potatoes

2 teaspoons olive oil

1 teaspoon garlic powder

Salt and Pepper to taste

With a sharp knife, slice potatoes thinly but not all the way through, leaving slices attached at the bottom. Place a butter knife on the cutting board next to the potato. Slice using the sharp knife down until you reach the butter knife. This leaves a section on the potato still attached and keeps you from slicing through. (See picture of apple)

Place potatoes in a shallow baking dish sprayed with cooking oil. Drizzle the tops of the potatoes with olive oil. Sprinkle it with salt, pepper and garlic powder.

Bake, uncovered, at 425° for 30 minutes.
