Scalloped Potatoes and Ham

After working all day, the last thing I wanted to do was cook dinner but it had to be done. My daughter was watching the cooking channel as I walked past the living room heading for the kitchen. The only thing that I heard as I passed was, “Scalloped Potatoes and Ham, that is what is for dinner!” Ree, the Pioneer Woman, spoke words directly to me. I was hooked and that was exactly what I had for dinner! I did mine differently and it was not as pretty as hers when it came out of the oven but it was wonderful!

Zucchini Spiral Squash Bake

Fred Meyer (Kroger) sends out their "mymagazine" to its customers which has coupons, recipes and stories. It is a very nice little magazine that I like to flip through when I get it. This time the chef had a section on tarts and galettes. The one that caught my eye was the spiral-squash galette. This is the printed recipe. 

Preparations time: 45 minutes | Total time: 1 hour 10 minutes | Serves 4-6

Ingredients:

1 pie crust

3 squashes (two zucchini, one yellow squash)

2 tablespoons olive oil

2 teaspoons Italian Seasoning

Zuppa Toscana

The first time that I tried Zuppa Toscana was at Olive Garden. I fell in love with the soup and decided to make it myself.

INGREDIENTS

1 lb ground Italian sausage

1½ tsp crushed red peppers

1 large diced white onion

I have been a fan of The Pioneer Woman - Ree Drummond, for quite a long time. She cooks and acts like I do in so many ways. She just seems like someone that loves a meal with family and friends just to have great conversation.

I was watching Food Network the other day and saw a rerun of Ree Drummond's Easter brunch, I think. I am not sure which episode number of "The Pioneer Woman" featured the Eggs in Hash Brown Nests, but I did find it on her blog.

Pecan Sandies Recipe

1-Cup Butter (2 - Sticks) Pecan Sandies
1/2 Cup Powdered Sugar
2 tsp. Vanilla
1 TBSP Water
2 Cups All-Purpose Flour
1 Cup Chopped Pecans
  Cream butter. Add sugar, vanilla and water until smooth. Gradually add flour until soft dough forms. Add pecans. Form into 1 inch balls. Bake on ungreased cookie sheet at 300 degrees for 20 minutes. Roll in powdered sugar once cooled slightly.
